French Onion Soup
I'm convinced that some traditional dishes are inseparable from utensils that are just as traditional—or even more so—than the recipe itself. When I think of a good paella, I imagine it being cooked and served in an iron paella pan. And the same happens with onion soup—I always associate it with a cocotte. This pairing could easily become a fun food-matching game, but I’ll leave that for another day, because today I want to share this fabulous French onion soup with you.
Roasted beetroot soup with coconut milk and ginger
If you've never tried beetroot soup, this recipe will win you over. Roasting it in the oven enhances its sweet and earthy flavour, and when combined with the creaminess of coconut milk and the spiced touch of ginger, the result is simply spectacular. This roasted beetroot soup is comforting, with a perfect balance of sweetness, freshness, and that little spicy kick that makes it special.

Pumpkin is one of the star ingredients of autumn, and also the base of a basic and essential cream to warm up in the cold months of the year. Today, this recipe for soft pumpkin cream (or pumpkin soup) is here to stay in the closet of all those who haven't enjoyed it yet. Those of you who are more of a cook will like to know that it is a recipe by the French chef Philippe Laruelle.
